Tasmania - April 2026 - Day 1

 Tasmania - Day 1

Simon and I flew to Hobart for a few days away. It was our first visit to Tasmania and we were eager to wander around and check out the sights.

We stayed at the Macq01 on Hobart's waterfront. It had a very cool, moody vibe for the interiors. It was situated in easy walking distance to everything. 

We had a lovely room with an amazing view and the staff, service, food & drinks were sooo good. Definitely recommend!

We walked around to Salamanca and had lunch. We then jumped into our hire car and drove the 5 mins to Battery Point to look at the historic houses and cute streetscapes. The pretty Arthur's Circus is worth a loop and we had a coffee at Jackman & McCross.









Lark Distillery was near our hotel and we stopped in for a quick whiskey tasting before checking into our hotel. We decided to stay at the hotel and have drinks at Story Bar downstairs and dinner at The Wharf Restaurant.







It was a full day and a great start to our Tassie trip!

Easter Recipe - Salted Caramel Eggspresso Martini

I was scrolling through Instagram the other day when this recipe for an Easter cocktail from The Grounds of Alexandria came up on my feed.

How delicious would it be to serve this up to friends and family over the Easter weekend?


Lucy the manager from the Potting Shed Bar at The Grounds was lovely enough to share her
recipe. I've popped it below in case you want to give it a try!

INGREDIENTS:
200g Cooking chocolate
30ml Salted Caramel Vodka
15ml Flor De Cana Spresso (coffee Rum)
15ml Tuca
30ml Cold Drip Coffee
30ml Thickened Cream
Medium sized Easter eggs to garnish
Daisies to garnish

METHOD:
Melt chocolate using the double boiler method, coat the glass and tip it upside down to remove any excess, before placing it in the fridge to set overnight. Patience here is key, and the tip is to use quality cooking chocolate – your regular cadbury block unfortunately won’t cut it here (but it’s handy to snack on while you work).
Add all the ingredients in a cocktail shaker and shake with ice.
Strain into your pre-set glass.

TO GARNISH AND SERVE:
Add a cracked easter egg and place on the side (we dare you to try not to eat the leftover). 
Top with coloured daisies and serve.

Simon's 40th Birthday Celebration!

We threw a party for Simon's 40th birthday on the weekend.
65 family and friends were invited to come and celebrate with us. We had an amazing time and there were a few sore heads the next morning. Always a sign of an epic night! ;)



I started looking for a venue a couple of months ago. I knew we didn't have the space at home (plus I wanted to keep the mess off site!) so I started looking for the perfect place.  

I wanted somewhere that would allow us to do our own food, drink and music and stay on past 11pm if we liked. (We ended up booking it til 1am) We decided on the Collaroy Swim Club right on the beach, heaps of parking space and central to our family and friends.



STYLING
The room was a blank space which was great but I wanted to add a few touches to personalise it and give it a festive birthday feel.  The main issue for me were the lights. They were a harsh flourescent light, not really conducive to that party feel! We decided to bring in our own rope lights to add a warm glow to the room. Luckily they were easy to hang off the existing roof beams.


We were going for a cocktail party style so we just had a few tables set up for people to rest their drinks on. I dressed these up simply with a little jade plant in a brass planter and a tea light candle. We also had a few long bench seats for those who wanted to sit but we wanted the majority of people up and mingling. We brought out extra chairs once dinner was served and as the night went on. 

Most of the walls were bare but I wanted to cover up 2 honour roll boards so I brought some black plastic from Bunnings and taped it to the wall. I then dressed up the backdrop with silver foil 40 balloons (Target) and some paper lanterns (Kmart). There was also another couple of big pinboards that I also decorated. One with a HIP HIP HOORAY sign and the other with a giant photo of Simon as a toddler. A gold foil "Happy Birthday" banner (Kmart) was the finishing touch.



FOOD
I knew I wanted to do a massive platter for nibbles for when the guests arrived and to graze on through the night. I set up 2 trestle tables in the middle of the room and popped on a tablecloth.
I then placed a 3 metre long piece of wood down the centre of the table to put all the food on.
(I picked up a piece of wood from the timber yard and Simon smoothed it out and oiled it.)
I served the usual antipasto food. Olives, sundried tomatoes, various dips, several types of cheese, crackers, lavosh, raw vegetables to dip, dried fruit, salami, proscuitto, cabanossi, quince paste, feta filled bell peppers, grissini, pretzels, falafel and nuts.



This was great as people could help themselves. I just had to top up the crackers a couple of times through the night. I had plates and serviettes set up on the edges of the table.

We also hired a 115cm paella dish (Oliver's Hire) and chef who cooked in front of everyone in the corner.  The smell wafting through the room was amazing and got everyones appetites going!


We used 4kg of Bomba paella rice, 3.6kg of chicken thighs, 3.3kg chorizo, 3.3kg fresh green prawns (head + tail removed) paprika, cumin, fennel seeds, saffron, salt, chicken stock, peas, parsley and lemon wedges. The cooking time was about an hour. This size pan usually serves 110 people (small bowls) but our group polished off the lot! People were going back for seconds and thirds. 
It was delish!


Instead of a birthday cake I brought 60 donuts and arranged them on a platter. 
This made it easy for everyone to help themselves. No cutlery or plates needed!

DRINK
We had a welcome cocktail for our guests on arrival. 
We set up 3 of our 7 litre mason jars with white wine sangria. 
Each mason jar had 14 shots of Cinzano Bianco, 7 shots of Triple Sec and 1.75 litres of Chardonnay. Topped up with approximately 3 litres of lemonade.  We then added ice, lemon, mint and lychees (canned) Drain most of the juice but add 120ml to the mason jar for extra sweetness.


We served them in a plastic tumbler over ice with a slice of lemon, a lychee and a mint leaf.
I also made up some straws with Simon's face on them for a laugh. They were definitely a conversation starter ;) 

We had 2 bars set up, 1 for soft drink and water. The other served beer, wine and champagne. 
We hired a couple of backpackers with hospitality experience to help set up, serve and clear away through the night. They were awesome and helped everything run so smoothly.

Later in the night we bought out trays of jelly shots.


This was a throw back to our 21st's and when Simon played rugby they would always go back to the clubhouse and jelly shots were always featured!

We made them by mixing up one packet of Aeroplane Jelly dissolved in 375mls of boiling water, add 150mls of cold water and 180mls of vodka. This makes up 12 x 60ml shots.
 (we preferred using the 60ml shot glasses rather than the tradtional 30mls - cups from Big W)
 The above ratio ensured that each jelly shot contained 15mls of vodka. They had a kick ;)

MUSIC
Our friend is a DJ and organised speakers for the night as his gift to Simon and put together some playlists for us to use through out the party. The right music makes all the difference!


We had such an amazing night and it was wonderful to catch up with everyone.
Simon was thrilled to see all his friends and family in the one room.

Date Night - March into Merivale - Food and Wine Festival

Simon and I had a date night last night and decided to jump onto a ferry and head into the city for the launch party of "March into Merivale"


"March into Merivale" is a food and wine festival showcasing the delicious food and cocktails from over 50 of Merivale's venues.

The champagne and Absolut Seabreezes were flowing (vodka, cranberry + grapefruit juice - delish!) and we sampled lots of amazing dishes from various pop up stalls in the laneway and on the various levels of Ivy. The paella was definitely a stand out for us! 

It was fun to wander around and come across different menus, watch the chefs cooking, pick and choose from the pop up stalls and find a spot to chill and listen to the music. The whole atmosphere and attention to detail in the styling of the event was fantastic and really added to the whole fun vibe.

It was such a balmy night it was lovely to finish up the evening sitting in a cabana by the pool.

An impromptu night out - 1888 hotel + Mr Wong + Palmer & Co

Simon and I had an impromptu night out in the city on Tuesday. These school holidays have been busy so it was nice to have the break with just us two. 

I'd also been offered a free night at the 1888 hotel due to having over 10k Instagram followers so we decided to take advantage of the opportunity and make it a little mini break.

We headed into the city to check into the hotel, have a wander around and decide on where we wanted to go for dinner.


 We checked in to the 1888, it had a very cool New York hotel vibe going on. It is also in a great location in Pyrmont, so close to Darling Harbour and a 5 min cab ride into the city.

We wandered over to Darling Harbour for a walk around the shops and a bite to eat. Also a couple of cocktails on a Tuesday afternoon felt very decadent!

We headed back to the hotel to hang out for a while before dinner. The bliss of having time to do nothing at all.
 
We decided to go to Mr Wong for dinner but stopped to have a drink in the bar downstairs before heading out.

We jumped in a cab and arrived in the lane way leading to Mr Wong. Terrific atmosphere and the place was jam packed. 
Who would have thought on a Tuesday night?



There was a bit of a wait for a table so we decided to wait in the bar downstairs, Palmer and Co.
 It was very cool,  we entered via the lift and walked out to a jazz band and a dark, moody Speakeasy.
The bar staff wore bow ties and suspenders and the waitresses were dressed as flappers. I love that attention to detail!



Exposed brick seemed to be the theme of the night!

Simon had a rum and ginger beer, and I had the Deusenberg cocktail a mix of citrus, vodka and popping rocks!

Once our table was ready we went back upstairs to Mr Wong and salivated over the menu. It all looked so delicious. We shared some dumplings to start and shared the Salt & Pepper Calamari, Char Siu pork, Rice and delicious Asian greens. We are still talking about the food!


 
After dinner we walked down to the Rocks to walk off dinner and to grab a cab. We popped into the Guylian cafe to pick up some chocolates to take home to the boys the next day.

We had the best sleep, the blackout curtains at the hotel worked a treat and it was 9am before we knew it.



Breakfast in bed was the finishing touch and we went home feeling rested. It's amazing how less than 24 hours away can make a huge difference.
