Friday Night Tipple/Dessert - Campari Citrus Sorbet

I felt like something fruity and different for this Friday night tipple. It's not really a drink, more of a sorbet but I'm sure some extra liquid would make it a lovely slushy cocktail.

I saw this recipe for Campari Citrus Sorbet on Mowielicious and thought it was perfect.

Campari-Citrus Sorbet (printable version)
each recipe makes 1.5 quarts sorbet
Grapefruit Sorbet
1 cup sugar
1 cup water
3 cups grapefruit juice
1/2 cup Campari
Orange Sorbet
1 cup sugar
1 cup water
3 cups orange juice
1/2 lemon, juiced
1/2 cup Campari
Mix the water and sugar together in a small pan over a low heat, and bring up to boil until the sugar dissolves. Allow the simple syrup to boil for exactly 4 minutes (this will give the sorbet the best consistency). Remove from heat and cool (makes a little over 1 cup).
Combine the citrus juice and Campari and add 1 cup of the cooled syrup. Adjust to taste: for the grapefruit sorbet, you may want to add a tablespoon or two extra syrup if you prefer it less tart. Remember, the mixture will taste slightly sweeter in liquid form than it does when frozen.
Freeze in an ice cream machine according to manufacturer’s directions (if you don't have an ice cream machine, don't despair! They also make great popsicles. After churning, allow sorbet to set in the freezer at least two hours. Serve in a bowl, or in a hollowed-out orange or grapefruit.

Happy Friday!

Friday Night Tipple - Blueberry Moscow Mules

I've always loved a Moscow Mule. The addition of blueberries makes this the perfect drink for a Friday Night Tipple.
Blueberry Moscow Mule recipe
1 cup ginger beer
1 shot ginger vodka
juice of one lime wedge
blueberry syrup (recipe below)

Directions
Pour the ginger beer, vodka and lime juice in a copper cup and stir. Add in the ice and then pour a little blueberry syrup on the top. Give it another stir and garnish with blueberries and a lime wedge.

Blueberry Syrup
1 cup fresh blueberries
1/4 cup water
1 tablespoon sugar

Directions
Bring the ingredients to a boil for 5 minutes, then let it simmer for another 10 minutes until it thickens. Strain over a glass bowl and let it cool.

Now I just need those copper mugs to drink it out of.
The finishing touch!

What's your tipple this Friday?

Friday Night Tipple - Sangria Swirled Frozen Margarita

As we head into the weekend, it's the perfect time to make yourself a cocktail.

This week's favourite is the Sangria Swirled Frozen Margarita.

As seen on Dessert for Two
Recipe
You know those cans of frozen limeade concentrate?  Yeah.  Grab one.  After you empty it into the blender, fill up the empty can half way with tequila.  Fill up the rest of the can with triple sec.  THEN FILL UP THE CAN WITH ICE.  I swear, don’t forget the ice.  Blend, blend, blend.  Rim a glass with salt, and pour.
So, for these fancy pants sangria swirl frozen margaritas, I sacrified 1 cup of fruity red wine to make wine ice cubes.  It’s totally optional. But, wait, when in life are pink drinks optional?  Never.  Good answer.
Sangria Swirled Frozen Margaritas
Prep time
Total time
makes 2 drinks
Serves: 2
Ingredients
For the sangria swirl:
  • 1 cup red wine, frozen in ice cube tray
  • 2 tablespoons triple sec (orange liquor)
  • 1 tablespoon fresh lime juice
  • juice of half an orange
For the regular frozen margarita:
  • 6 ounces frozen limeade concentrate
  • 2 shots tequila
  • 1 shot triple sec
  • 1 cup ice
Instructions
  1. First, dip two margarita glasses in water or lime juice, and rim the edges with salt or sugar (your choice).
  2. Next, puree the frozen red wine cubes with the triple sec, lime juice, and orange juice. Pour into a small glass and have ready on the side.
  3. Add the limeade concentrate (not defrosted), tequila, triple sec and ice to a blender. Puree until slushy.
  4. Divide the margarita mixture between two glasses, and swirl in the sangria mixture.
Notes
*It would be super easy to double this recipe and use a whole can of frozen limeade concentrate and make 4 drinks. Party!
